SaddleBrooke Singles Celebrate with Corned Beef and Irish Jigs

Irish eyes were definitely smiling at the SaddleBrooke Singles St. Patrick’s Day Party on March 17.

Walking in the front door, guests were immediately transported to the Emerald Isle with the sounds of Celtic folk music and the enticing aromas of traditional Irish cuisine.

The party was held at the home of Laurie O’Toole, who pulled out family recipes handed down from her mother and grandmother for the evening’s entrees. Corned beef and cabbage, and Irish bangers and mash (Irish sausage cut up in mashed potatoes with onion gravy) were huge hits. There was also shepherd’s pie, and of course plenty of Irish soda bread.

The temperature was perfect for the 45 guests to sit outside and enjoy an evening of good food and conversation. Our next private home party is tentatively scheduled for Cinco de Mayo.

The Singles club meets every Friday night year-round for Happy Hour and dinner at SaddleBrooke One or SaddleBrooke TWO, depending on the month. They are held as SaddleBrooke One during odd months and SaddleBrooke TWO for even months. Other events include Bocce Ball on Mondays, and Trivia on Friday mornings.

Membership is open to any SaddleBrooke resident who is single, or whose spouse is living permanently in a long-term care facility. Membership is $20, and runs from Sept. 1 through Aug. 30.
